The mango, one of the oldest tropical fruits, has been cultivated for more than 6000 years and has a very balanced, delicious, sweet, sour flavour. The ripe fruit is used in India for soft drinks, jellies, chutneys and ice cream and the pulp is used as mousse. Unripe mango is used in chutneys and pickled.
