The tonka bean is also known as Mexican vanilla and, as the name suggests, has a flavour similar to vanilla. The aromatic beans can be grated and used to add a delicious flavour to biscuits, cakes, rice pudding, desserts and ice cream. Native South Americans attribute a magical and healing power to the beans. Until the 1940s the bean was also used as an official means of payment in Venezuela.
