Asafoetida (Ferula assa-foetida) belongs to the umbelliferous family of plants. An essential characteristic of this plant is the milky sap contained in its leaves, stems and roots. This hardens when exposed to air. The strong and pungent odour of the resin and the plant is somewhat unpleasant in its natural state. Asafoetida is used in powder form in Ayurvedic cuisine such as in Rasam Masala (a spice blend), various dals and hearty stews.
