Kheer: Ayurvedic Rice Pudding

This rice pudding is perfect as a wholesome breakfast, as a dessert or simply as a snack between meals. Thanks to its ingredients, it reduces Vata when eaten warm and is therefore perfect for anyone who needs a pick-me-up or wants to relax. Enjoyed cold, it reduces Pitta. It also tastes simply delicious.

The main ingredients of Kheer are rice and milk. Rice is a very nutritious food, while milk, according to Ayurveda, gives strength and boosts the immune system.

Here is the recipe:

Ingredients:

  • 4 cups organic milk (coconut milk also works)
  • 1 cup of water
  • ½ cup basmati rice
  • 1 tbsp honey
  • 1 teaspoon chopped cashew nuts
  • 1 teaspoon almonds
  • 1 teaspoon pistachios
  • 1 teaspoon dates
  • 1 teaspoon cardamom powder
  • 1 teaspoon ghee

Preparation:

  1. Wash the rice and soak it for an hour.
  2. Then bring the milk to a boil and add the rice, cardamom and ghee.
  3. Let everything cook on a low flame until the rice is cooked through and the milk has thickened a little.
  4. Add the cashew nuts, almonds, pistachios, and dates.
  5. Let everything simmer for another ten minutes.
  6. Stir in the honey just before serving and enjoy.
